The Blue oyster mushroom is a vibrant blue color when young, and then turns a bluish-gray and brown color as it matures. This mushroom exhibits a slight anise and a light metallic taste when raw, but produces a tender, earthy and savory flavor and retains a hint of a licorice taste when cooked.
